Sakai Takayuki Homura 210mm Kogetsu Gyuto
Hand crafted by Itsuo Doi in Sakai Japan, this knife has a very individual profile, lending itself to more of a rocking motion than many Gyuto. Blue #2 carbon steel with soft iron cladding in a lovely kasumi finish. The handle is a beautiful combination of Yew with a buffalo ferrule and the knife comes with its own custom black saya.
