Morihei Hishiboshi Whetstone #9000 (Karasu)
Made with natural stone powder, this 9000 is a great medium hardness finishing stone. Morihei Professional level whetstones are a joy to use. Larger and thicker than most, they yield a longer life than other synthetic whetstones but a finish closer to that of a natural stone. Splash and go – soaking not required, though I prefer soaking for a couple of minutes.

Hi Lance, just received the Morihei Karasu 9k and have been testing it out. First impressions of this stone have been great. The stone is definitely on the harder side, which I believe is good for this grit range as it provides a controllable amount of slurry. The finish this stone leaves on single bevel knives is highly dependant on the amount of slurry that has accumulated, with more slurry leaving a hazy kasumi and little to no slurry resulting in a high polish on cladding steel and mirror finish on core steel, as seen in images attached (only tested on high carbon blades, may leave a different finish for stainless.) The stone has a slow wear rate and a muted, yet plush feedback which is very satisfying to use. I have found the edge on double bevel knives to be very usable and had no issues with bite with more difficult produce (tested on garlic peel, over ripened tomatoes, charred capsicum). Overall a great stone with great results. Thanks Lance!
