Crafted by the highly respected blacksmith Togashi San, from White #2 (Shirogami) high carbon steel with a soft iron cladding, this Gyuto has a great feel in hand with a high level of fit and finish. This really is the nicest Kiritsuke Gyuto that I have handled - It's very hard to get hold of knives like this from Togashi San and I don’t think it will be in the shop long
