This new synthetic whetstone from Hitohira is proving very popular and winning over a lot of new users.
In use, I’ve found this knife is best suited for harder steels - say RC 59 and above. At this level, it has a nice bite and smooth feel and is a pleasure to use.
Softer steels tend to be a bit sticky, so I avoid using it on European stainless steel knives, like Sabatier or Wusthof, for example.
