Teruyasu Fujiwara has a reputation as a pioneer in Japanese blacksmithing and his heat treatment is superb, giving extremely sharp knives that outperform others in a similar cost bracket.

As these knives are thin and have a high HRC (hardness on the Rockwell scale), they do need to be treated with care and respect, to prevent chipping - no twisting and no ice breaking.
