This lengthy carving knife has a 240mm blade edge, making it ideal for slicing long pieces of meat straight off the bone. Christmas ham doesnt stand a chance. With a 35mm blade width, Jericho has the right amount of blade area to still easily maneuver bone when needed to keep your slice consistent. It isn't just for meat. Jericho makes light work of shaving cabbage down and is still light enough to hold off the board to slice vegetables and cut down a wheel of Brie for a charcuterie.
Made with recycled carbon steel and a padauk hardwood wood handle, the Cain & Abel mineral oil (KCA009) is the perfect product to protect carbon steel from oxidation.

About Cain & Abel knives: The carbon steel used in Cain & Abel blades is from recycled leaf springs from heavy trucks & Russian war trucks that served in the Vietnamese war. The steel is 5180. This spring steel is a tough form of steel with a higher Carbon makeup. The higher Carbon reduces toughness, but increases wear resistance and attainable hardness. The steel is heat treated, giving the knives an HRC of around 60.
HRC stands for Rockwell hardness, which refers to the level of hardness the steel has. Japanese knives are usually between 60 to 63 HRC. They can be easily re-sharpened and hold an excellent edge because of the makeup of the steel.
